
Since early December, our Lower Elementary Middles have been enjoying the crisp winter air and diving into their farming classes. This term, we’ve been exploring the parts of plants and how they work through hands-on activities that the winter season makes especially exciting.
Students have been busy saving persimmon seeds, digging up horseradish roots from the food forest, propagating fig cuttings, investigating how plants protect themselves, and even coaxing twigs to bloom ahead of spring. Each lesson also gives students the chance to try a new tool or growing technique, helping them build strong gardening skills while discovering more about the fascinating world of plants.
One of the most loved parts of our time together has been tasting what we grow. From the crunchy sweetness of fall carrots to the bold bite of horseradish, and the fresh flavors of pea shoots, alfalfa, red clover, fenugreek sprouts, and radish & brassica microgreens, every taste has helped deepen our connection to the natural world. We’re excited for many more discoveries as the season continues!
